  • 150 g /3.5oz polenta
  • 50 g /2oz white flour
  • 6 strips bacon
  • 150 g /3.5oz mild cheddar cheese, sliced/grated
  • 2 eggs
  • 1/2 cup a of yogurt
  • 2 tbsp sunflower oil
  • 1 tsp baking powder
  • 1 tsp salt
  • 1 tbsp dry thyme

Directions:

1.Preheat the oven to 200°C/392°F.

2.In a bowl, combine the polenta, flour, salt and baking powder and mix.

3.Add the eggs, oil and yogurt and work the mixture with a hand mixer to a thick consistency.

4.Form a small ball, place the cheese slices in the middle and wrap it up with the bacon strip. 5.Do the same with the rest of the mixture.

6.Place the muffins in a silicone mould and bake for about 30 minutes or until ready.

7.Sprinkle the dry thyme and serve hot!

We wanted to cook a roast on Sunday but had limited time as we also wanted to go to church and we didn't have a morsel of food in the fridge....not ideal when the recipe I picked out took over 4 hours. So instead I had to improvise and we decided to buy a roast chicken and cook this potato gratin from a Waitrose recipe card. It took about an hour and 10 minutes in total and was pretty easy.

Blue cheese, bacon & beef are one of my favorite burger combinations ever. What I like most about this burger is there is both blue cheese & bacon mixed into the burger itself as well as melted on top of the burger! I prefer to use crumbled blue cheese, available in almost all cheese sections, in the burger mix, then a creamier blue cheese, such as Saga or Cambozola, for melting…both ..
