Ingredients:

  • 4 eggs
  • 6 tbsp cane sugar
  • 100 g dried cranberries, rinsed with hot water
  • 50 g ground carob
  • 75 ml grape seeds oil (or other)
  • 150 g Greek plain yogurt, non fat
  • 70-100 ml whole milk
  • 3/4 cup all purpose wheat flour (or other gluten-free)
  • 1/4 cup + 3 tbsp buckwheat flour
  • 1 tbsp bicarbonate
  • 3 sour apples, grated
  • 1 tbsp powder sugar to sprinkle
  • 5-10 leaves mint
  • 10 apple chips

Directions:

Mix yolks with sugar, then add yogurt and oil, add sifted flour in which you have added baking powder, finally add carob

Pour the milk into the mixture to get a smooth consistency

Add apples together with cranberries and mix in the firm foam beaten from egg whites, stir in gently and pour into a greased and floured spring form of (about 23 cm - 9 inches in diameter), bake at 180 degree C (350 degree F) for about 45 – 60 minutes, reduce the heat after 25 minutes and continue baking until toothpick comes out clean from the center

Leave the cake cool down, then sprinkle with powder sugar and garnish with apple chips and mint leaves

This tasty Romanian cake is made of whole apples flavored with cinnamon, raisins and walnuts, poured with the caramel syrup. We have little changed the original recipe by decreasing calories and adding a taste of Calvados to the caramel syrup.
