Directions:

Wash chicken thoroughly. Put into a large kettle an cover with water. Boil it and reduce heat.

Add onions, celery, carrot, parsley, salt and pepper. Cover and simmer 1 1/2 to 2 hours.

Remove chicken and meat from bones. Strain broth and let it cool.

Brown chicken broth is more flavorful than white broth, but for cream soups and white sauces, you need a white broth, which takes less time to make. For a clear soup, make white broth with chicken parts that contain meat (not with backs or just wings) because the bones will cloud the broth.

It's been colder the last few weeks and we've been into soups. I made this a couple of weeks ago and will probably make it again for our cold spell this week. I spotted this over at Copycat recipes.
