As I said it’s easy. Take the ripe avocado and smash it. Add salt and pepper. Heat a frying pan and fry pita on both sides, both sides should be golden. Place pita on a plate, spread avocado, drizzle with lemon juice and olive oil, place freshly cut tomatoes on it and sprinkle with salt, pepper and chili flakes. Fry the egg and place it on top of your pita, put some chives on top. You can roll it, most probably it will be more comfortable version, or eat it like a pancake.

I recently discovered that spinach and eggs goes really well together..I can assure you that mixing eggs with spinach makes the humble spinach more tasty..Just scramble some eggs and spinach together and this makes a good filling for burritos,rotis and many more..I will make the perfect scrambled spinach eggs soon in another one post...Usually sautéing tomatoes and spinach in olive oil makes ..

Ah! I remember mom cooking these for weekend brunch when we were little. Made out of bread and fresh vegetables. All goodness and beauty in those sweet triangles :). And definitely much controlled in calories and fat when compared with an original pizza. Get cooking :).
