Plus this recipe is super easy and quick which is essential when you have a little .. more >

Directions:

1

Cook the pasta in salted boiling water according the the packet's instructions. Mine took 10 minutes.

2

Meanwhile cut the cheese into cubes and speck into slices.

3

A couple of minutes before the pasta is ready, add the spinach, a handful at a time and then drain when ready.

4

Return the pasta and spinach to the pan and place over a low heat. Add the cream, speck and taleggio to the pan and slowly stir until all mixed and the cheese is melted.

5

Serve with a generous grinding of black pepper and a sprinkling of Parmesan.

6

This was really delicious although one word of advice - don't add salt until you have tasted - the speck can be quite salty! Once again, we all really enjoyed this, even Arabella who isn't the biggest fan of spinach. If you can't buy speck and taleggio, you can use mozzarella and ham instead - both will work well. Another easy and tasty pasta dish.

I had some ricotta left over from when I cooked my slow cooked tomato and sausage pasta and I didn't want to just waste it so I searched for a recipe where I could use it up. I came across this recipe in Fay Ripley's second cookbook "What's for Dinner?" - I remember cooking it before, about 3 1/2 years ago - it took about 25 minutes to cook in total.

We celebrated Father's Day twice this week and twice with pasta - Pascal's favourite! On Thursday we had Tomato and Basil Pasta with Arabella and then on Sunday I cooked this dish - pasta with mushroom, spinach, peas and blue cheese - as Arabella wasn't here and she would not be a fan (she hates mushrooms and blue cheese). This is a waitrose recipe from 2007 (!) and it took ..

A couple of weeks ago I cooked One Pan Puttanesca where you cook the entire pasta dish in one pan - apparently it is all the rage on Pinterest at the moment. I then came across another one pan pasta recipe, and due to my complete lack of time at the moment, I thought I would give it a go. Less washing up time is a huge bonus! It took about 20 minutes in total and was very simple.
